Alcohol: 14.5%

Region: Piedmont (Italy)

Format: 0.75 l

Grapes: 100% Nebbiolo

VINIFICATION AND AGING: The freshly harvested grapes are crushed and destemmed and left to ferment in temperature-controlled stainless steel vats. Once the alcoholic fermentation has started, the daily pumping overs begin in order to facilitate the extraction of the color and primary aromas of the grapes from the skin. After 8 - 10 days the fermentation ends and the submerged cap maceration takes place. This last phase is very important because in addition to prolonging the period of extraction from the skins, which already began after pressing, it facilitates the stabilization of the color of the future wine. During the maceration, which lasts an average of 25 - 30 days, malolactic fermentation also takes place which contributes to making the wine stable from a microbiological point of view. The period of aging in wood begins in December and lasts an average of 30 months. This is followed by bottling and further refinement in the bottle for another 8 - 10 months, at the end of which the product will be ready for sale

VIEW: Bright and brilliant ruby red color, intense with slight orange reflections

SMELL: Clean, ample with delicate notes of violets, spices, hay and licorice

TASTE: Harmonious, full and slightly dry with a very persistent and complex finish that leaves a pleasant hint of licorice

GASTRONOMIC COMBINATION: In the first years it can be combined with first courses with meat sauces, stuffed egg pasta and important and tasty main courses such as braised and stewed meats, including game. It goes well with medium-long aged hard cheeses. After 10 - 15 years it becomes excellent with very long aged cheeses, truffle preparations and even just as a meditation wine
