It is a cuvée marked by richness (ripe Pinot Noirs, aging on the lees with bâtonnage, presence of vins de réserve). The moderate yields, the contained contributions of organic material to the soils and the wait for perfect ripening give the Pinot Noir and Meunier bunches a higher than normal concentration of anthocyanins (dye molecules present on the skins of the grapes).
Rémi Leroy does not try to standardize the wine in the various vintages, even if there is a part of vins de réserve, but rather indicates on the back label the base vintage of the grapes that mainly make it up.
Organoleptic characteristics :
- View: straw yellow color. Fine-grained and long-lasting perlage.
- Smell: spicy and white fruit notes on the nose, as well as
brioche and pepper. - Taste: round, full and structured. The finish is persistent.
