Part of the grapes is destemmed and another part is fermented with the stalk. After about 40 days of maceration, it is pressed and transferred to terracotta jars.

Only half is destemmed and the other half remains with the whole berry. 40 days of skin contact. After the pressing process, it is transferred to amphorae.
