Soft pressing and low-temperature fermentation with selected yeasts allow the aromas of the grapes to express themselves fully and blend with those produced by the yeasts. In spring, when the base wines have reached the ideal refinement for secondary fermentation, the Alperegis Brut cuvée is created, assembling the base wines that best express the characteristics of mountain Chardonnay. Low-temperature secondary fermentation and aging on the lees for a minimum of 36 months lead Alperegis Brut to the ideal aromatic and taste balance to support disgorgement.\u003c\/p\u003e\n\u003cp\u003eORGANOLEPTIC CHARACTERISTICS\u003c\/p\u003e\n\u003cp\u003eColour: straw yellow with golden reflections. Aroma: hints of ripe yellow fruit, with citrus nuances, along with notes of bread crust and sweet almonds. The perlage is creamy and persistent.
