Located on the La Serra estate in the Municipality of Cassine, Province of Alessandria, with southern exposure and an average altitude of about 240m above sea level.
Vinification and aging
Red vinification with emerged cap maceration at a controlled temperature, with repeated daily pumping over. Complete malolactic fermentation following the alcoholic fermentation. Aging in wood for a period of five months, partly in second and third passage barriques and partly in Slavonian oak barrels. Short period of refinement in the bottle before release.
Color: Intense ruby red, with violet reflections.
Bouquet: Intense and persistent fruity notes of wild blackberry, raspberry and cherry.
Taste: Fine and elegant, pleasant to drink, it owes its balance to the combination of acidity and fullness of the body. Crunchy wine.
Ideal with local sausages and tajarin with meat sauce, it also goes well with fresh cheeses.
