SENSORY SENSATIONS:
Soyard's Equilibriste Rouge manifests itself with a traditional, but not excessively deep, ruby color tone. The aroma is dominated by fruity notes, accompanied by light herbaceous nuances and nuances of toasted wood. In the mouth, it has a light body and underlines its charm with a harmonious sip, in which the tannic texture blends elegantly. The tasting ends with an aftertaste that evokes the flavor of liquorice.
CURIOSITY:
Marc Soyard is one of the most fascinating young wine producers in the Burgundy region and has recently taken on the responsibility of managing 8 hectares of historic vineyards located on the outskirts of Dijon. As a basic condition, it is required that he not only be able to produce great wines, but that he is also committed to organic farming. Marc has also introduced some biodynamic practices into the winemaking of his wines and uses minimal amounts of SO2, qualifying them as "natural wines". The maturation of the wines takes place in oak barrels of different sizes, both new and used. He is the only producer authorized to label his wine as "Coteaux de Dijon". His winemaking technique is mainly influenced by the experience gained at Domaine Bizot. The history of this label is interesting: the cuvée "l'Equilibriste" was created for a circus festival near Dijon. Around 200 bottles have been produced and the young Marc Soyard is making waves around the world, continuing to do so for many, many years to come
