Dauvissat's Chablis Premier Cru Séchet 2015 derives from Chardonnay grapes grown in a vineyard included in the premier cru area of Vaillons, which, with its vast extension of 128 hectares of land planted with vines, is the largest among those of the appellation.
The parcel of Séchet occupies an elevated position within the vineyard, with its vines facing southeast, growing on soil characterized by the typical presence of Kimmeridian limestone. This peculiarity gives the wines an intense minerality. Despite the shallow soil surface, the grapes ripen quickly. However, this particular label is distinguished by a more lively and nervous character than the others. For this reason, aging in oak barrels is essential.
In appearance, the Séchet has a bright straw yellow colour. On the nose, a very mineral bouquet is perceived, accompanied by vegetal and citrus notes. The sip is structured but at the same time tense and lively.
