Vinification and ageing
Manual collection at optimal ripening of the grapes.
Vinification in large oak barrels (Foudre de Chêne) : for 8 months.
Natural malolactic fermentation that takes place entirely in barrels.
Maturation : minimum 3 years, more than twice as long as the Appellation rules (15 months).
The bottles are placed on the wooden stands and turn manually
Aging : minimum 3 years.
Dosage (Brut) : 7.8 grams per litre
Tasting notes
This expressive and delicate Champagne will surprise you with its length and great purity. An intense and complex nose of extreme freshness with fruit notes (citrus, white fruits). A very pleasant and rounded taste attack, which ends with a nice vivacity with notes of white peaches and Mirabelle plums.
Pairings
Champagne for aperitifs and first courses.
Its citrus and white fruit notes make it ideal to accompany the most delicate dishes: fish and shellfish, shellfish soup, as well as white meat and poultry dishes such as chicken breast with mushrooms.
