Vinification: the grapes come from several vineyards located in the municipality of Monleale, with south-east and south-west exposure. The soil is calcareous-clayey. The fermentation, which lasts about 4 weeks, is carried out partly in ceramics, partly in wooden vats and partly in steel. Malolactic fermentation is not carried out.

Aging: 10 months in total between ceramics, wooden and steel vats, in contact with the fine lees kept in suspension with repeated batonnage.

Description: in the glass it is limpid, of an intense yellow color with greenish reflections; on the nose fruity hints reminiscent of pear, peach and floral such as acacia flowers and hawthorn; a characteristic note of honey is also perceived. After 2/3 years the mineral notes are more noticeable, in some cases accentuated by the typical hint of hydrocarbon, which embellishes the wine. In the mouth it is dry, warm and soft, very balanced; it has no edges and in the finish a good acidity is well perceived which gives a lot of length and persistence to the palate.

Pairings: Raw meat, cured meats that are not too seasoned, hot and cold appetizers, first courses also with a marked flavor and preparations based on white meats. After a few years in the bottle it becomes a perfect wine to pair with even aged cheeses.
