Divella's Blanc de Blancs Dosage Zero stands out for its lively expressiveness, strong character and nuances of flavor that intertwine in a surprising way. With a splendid golden hue, it presents itself in the glass with a refinement that captures attention, while the persistent and lively perlage dances elegantly on the palate. The nose, from the first encounter, is eclectic and multifaceted, evoking memories of typical bakery fragrances and artisanal sweets, the result of long aging on the yeasts. The entry into the mouth is crisp and fresh, constantly inviting a subsequent sip. Perfect to savor alone or paired with fish-based dishes and mixed cheeses, it adapts with versatility.
Divella's Classic Method Blanc de Blancs is a sparkling wine that stands out for its exceptional personality and refined interpretation. Behind this label lies Alessandra Divella, a young and self-taught winemaker who has given life to this small winery since 2005 starting from just 2 hectares of vineyards. This quality artisan jewel has roots in the less explored borders of the Franciacorta area. Divella's Classic Method Dosage Zero is a Blanc de Blancs obtained from white grapes coming from vineyards located at approximately 400 meters above sea level on ancient limestone and clayey soils, enriched with fossil material which gives minerality to the sparkling wine. Environmentally friendly agriculture enhances the natural aromatic and taste characteristics of the grape. After manual harvesting and delicate pressing, the must ferments spontaneously with indigenous yeasts in concrete tanks. Only part of the base wine is transferred to used wooden tonneaux, where it rests on the fine lees. The second fermentation takes place in the bottle according to the Classic Method, with aging on the yeasts which gives the final product a unique olfactory bouquet.
