2017 was a basically dry year, with a winter characterized by no rain and below average temperatures. The hot and dry climate during the summer period favored the early ripening of the grapes, guaranteeing an excellent health status of the bunches. The grapes at the time of harvest were healthy, characterized by a good freshness and capable of giving the wine an excellent balance between the ripening of the tannins and the alcohol content. The Pinot Noir harvest began in the last week of August and ended around the first week of September.

Vinification After destemming and soft pressing, the grapes were transferred to small truncated cone-shaped stainless steel tanks, where after the cold maceration for about 3 days was followed by alcoholic fermentation, which lasted about a week. The latter took place at a controlled temperature of 26 ° C and finished in French oak barriques where the wine also completed malolactic fermentation and continued aging for a few months. The Pinot Nero della Sala refined a period in the bottle in the historic cellars of the castle before being released on the market. Historical data The 4 hectares of vineyards from which the Pinot Nero del Castello della Sala is produced are located at over 400 meters above sea level on calcareous soils rich in fossils with sands of sedimentary origin dating back to the Pliocene. This wine was produced for the first time with the 1990 vintage. The Castello della Sala is a fortress dating back to the 14th century located about 18 Km. From Orvieto, which was bought by the Antinori family in 1940. Tasting Notes Pinot Nero della Salasi has a bright garnet red color. The nose recalls delicate sensations of spices, violets and small red fruits. On the palate it is typical, soft and savory, with silky and characteristic tannins that amplify its pleasantness.
