After manual harvesting and rigorous selection, the must ferments in open vats for 3-4 weeks, then ages for about 18 months in oak barrels, one-third of which are new, to develop complexity without masking the fruit. On the nose, it opens with hints of ripe cherry, sweet spices, and light woody notes. On the palate, it is balanced, full, and round, with soft tannins and a persistent finish that recalls the typical finesse of Burgundian Pinot Noir.
