VINEYARD EXPOSURE: South - West with an average height of 300 meters above sea level COMPOSITION OF THE SOIL: Marl of Sant'Agata composed of white calcareous soil YIELD PER HECTARE: 8 T / Ha with a density of 4000 plants / Ha HARVEST: Manual in small crates WINE MAKING AND AGING: The freshly harvested grapes are crushed and destemmed and left to ferment in temperature-controlled stainless steel wine tanks. Once the alcoholic fermentation has started, the daily pumping over is started in order to facilitate the extraction from the skin of the primary color and aromas of the grapes. At the end of the alcoholic fermentation, the wine is left to macerate with the skins for a further 7 - 8 days before being drawn off. After some decanting and the malolactic fermentation completed, the wine is aged in barriques for 12 months and then bottled 14 - 16 months after the harvest. A further refinement in the bottle follows for another 6 months, at the end of which the product will be ready for sale.
