Position and soil Two thirds of the grapes come from the Lieben Aich estate in Terlano and the other third from the vineyards located near Castel Campan. Lieben Aich is a vineyard with a warm microclimate, facing south-west, at 300 m asl and with sandy, porphyritic soil of volcanic origin. Campan, on the other hand, has a cool microclimate, east facing and is located at more than 500 m asl, the soil is clayey-limestone with moraine deposits. Vintage 2021 was a relatively late year. The harvest began on 13 September with the Sauvignon Blanc in Lieben Aich and ended on 20 October with the Cabernet Sauvignon in Manincor. The ripening period, in particular, was characterized by an almost perfect weather, with sunny days and clear nights in which it cooled down properly. So 2021 is all about balance. Physiological maturity, sugar maturity and acidity are in optimal balance. Ripe fruit, fresh character and moderate alcohol characterize the vintage. From mid to late September, we were able to harvest all our varieties for the Réserve della Contessa. The yield per hectare was 53 hl.
Vinification The de-stemmed grapes were left to macerate for six hours in the press in order to draw aroma and structure from the skins. Fermentation took place in wooden barrels, spontaneous without the addition of yeasts. During the nine months of refinement in contact with the yeasts the aroma and taste were enhanced. Description and combinations
Intense yellow color with greenish reflections. Fresh scent of apple, apricot and a hint of sage. Enveloping, elegant, a wine with a long persistence. It will give its best from summer 2022 to the end of 2028. Serving temperature: 8 - 10 ° C It goes well with appetizers, fish and vegetarian dishes, white meats.
