Produced from old vines cultivated in the northern part of the Côte de Beaune, the Bourgogne Chardonnay Vieilles Vignes is born from a careful selection of hand-picked grapes and vinified with artisanal care. Fermentation takes place in 350-liter oak barrels (half new), where the wine rests for a year, also completing malolactic fermentation. On the nose, it opens elegantly with notes of ripe apricot, fresh almond, and slight toasted accents. On the palate, it reveals balance and depth, with a refined persistence that underlines its quality and origin. Perfect with white meats, fish in sauce, mushroom-based dishes, or soft bloomy rind cheeses.
