SENSORY NOTES:
On the nose, it presents a delicate and fruity fragrance. On the palate, nuances of pear and apple are revealed, imparting a rich intensity accompanied by a pleasant tension. This wine has the potential to further evolve if stored for a period of 2 to 5 years.
CURIOSITIES:
Located in the picturesque hills near Dijon, the 3 hectares of vineyards at Domaine de la Cras are dedicated to the Chardonnay grape. The management of this vineyard is entrusted to Marc Soyard, thanks to a collaboration with the Chambre d'agriculture of the Côte d'Or. Marc gained his winemaking experience at Domaine Bizot in Vosne-Romanée. His philosophy is based on a deep respect for wine and the practice of low-intervention winemaking. Firstly, the vines are cultivated following organic principles and integrating biodynamic practices. Harvesting is done manually to ensure the highest quality of grapes. This white wine begins its journey with direct pressing, thus giving it a distinctive pure profile. Fermentation occurs naturally with indigenous yeasts, and only a minimal amount of sulfur is added. The aging process takes place in both new and used oak barrels for a period of 15-18 months.
