It is mainly obtained from Pinot Noir grapes, to which a percentage of Chardonnay is added. The vineyards are located in the Grand Cru area of Ambonnay, at an altitude of just under three hundred meters, the vines enjoy the benefits of the chalky and calcareous soil, as well as the biological methods of cultivation. After the manual harvest, the grapes are transported to the cellar, where they are subjected to soft pressing and spontaneous fermentation in steel tanks. The refermentation in the bottle is followed by aging on the lees and continues for six years, under the watchful eye of the chef de cave of this company. The disgorgement is "volée" and is characterized by the addition of the classic Brut dosage. The result is a splendid Champagne Brut Grand Cru Ambonnay Millesime , elegant, refined and with a great aromatic complement; its structure allows it to be enjoyed even after a few years' rest in the cellar.
