The soul of Alta Langa in Ca' Viola's first white wine

Clem 2023 is the first white wine in Ca' Viola's history, marking the beginning of a new project among the pristine hills of Alta Langa, where altitude and soil combine to enhance the mineral elegance of Riesling Renano.

Cultivated at 600 m above sea level on marl-limestone soils with clay, the Riesling is trained using the Guyot system, vinified with soft pressing and 15-20 days of fermentation in steel at controlled temperature, then aged for 10 months in steel on fine lees.

The result is a fresh, savory, and vertical wine, with great aromatic definition and remarkable aging potential.

It is bright yellow to the eye.
The nose releases clear and complex aromas of white peach, lime, cedar, grapefruit, and white flowers.
On the palate, it is juicy, fresh, and saline, with a vibrant minerality that prolongs the sip and ignites the desire for the next.

Perfect with baked fish, sushi and raw fish, vegetarian dishes, fresh cheeses, and even gourmet pizza. Serve at 10 °C, in medium-sized glasses.
