METODO CLASSICO PINOT NERO EXTRA BRUT "FARFALLA" COLLECTION N°12 - BALLABIO

Farfalla Extra Brut represents the essence of Ballabio style. It is the synthesis of the elegance, freshness, and complexity of Pinot Noir. Its balance comes from grapes from owned vineyards with a predominantly calcareous-clay structure nestled on hillsides between 300 and 400 meters above sea level.

The Oltrepò Pavese is a hilly strip of land south of Lombardy, known for being the meeting point of three regions: Lombardy, Piedmont, and Emilia Romagna. This peculiar characteristic makes the Oltrepò Pavese rich in different cultures, languages, traditions, and cuisines, all well integrated with each other.

Equidistant from the North Pole and the Equator, where the lunar freshness of the North meets the solar warmth of the South, lies the 45th parallel, the quintessence of natural balance for the vine plant.

Vinification:

Soft pressing of whole grapes to extract and ferment only 45% of the free-run must at controlled temperature. Aging in steel tanks until spring on its own yeasts.
Secondary Fermentation:

Assembly of the Cuvée using, along with the wines of the vintage, a good 20% of reserve wines, aged in thermo-conditioned stainless steel tanks to confer complexity and uniqueness. Tirage with yeasts selected by the company and aging in bottle for at least 30 months. Disgorgement and a further 2 months of evolution before release to the market.
