This Cuvée, crafted with infinite care and according to the most rigorous Ballabio tradition, celebrates the intensity and particular elegance of Pinot Noir vinified as a rosé.
Oltrepò Pavese is that hilly strip of land south of Lombardy known for being the meeting point of four regions: Lombardy, Piedmont, Liguria, and Emilia Romagna. This peculiar characteristic makes Oltrepò Pavese rich in different, yet well-integrated, cultures, languages, traditions, and cuisines.
Equidistant from the North Pole and the Equator, where the lunar freshness of the North meets the solar warmth of the South, lies the 45th parallel, the quintessence of natural balance for the vine.

Grape harvest:
Traditional hand-picking in 18 kg crates
Vinification:
Soft pressing of whole grapes to extract and ferment only 50% of the free-run must at controlled temperature. Aging in steel tanks until spring on its lees.
Second fermentation:
Assembly of the Cuvée using, along with the vintage wines, a good 20% of reserve wines aged in thermo-conditioned stainless steel tanks to confer complexity and uniqueness. Tirage with selected yeasts from the winery and aging in bottle for at least 30 months. Disgorgement and a further 2 months of evolution before release.
