Vinification and refinement

Spontaneous fermentation with indigenous yeasts, malolactic fermentation not carried out, maturation in steel on the fine lees for 12 months, and refinement for 6 months in the bottle.

Sensory description

Brilliant white with greenish hues, intense and slightly aromatic aromas of fresh tropical fruit, pineapple, white peach and litchi, white musk, rose, lemon granita, lava stone and salt. On the palate it is harmonious, extremely fresh, fine and vertical, saline and persistent. It recalls the white freshness of the snow and the salinity of the Mediterranean.

Gastronomic pairings

It pairs very well with raw fish dishes, seafood, oysters, shellfish and wild asparagus.
