Colli Tortonesi Timorasso DOC Derthona “Thimos” 2024 – Alvio Pestarino

"Thimos" is made from carefully selected Timorasso grapes from the Colli Tortonesi, a region that in recent years has established itself as one of the most interesting for great Italian white wines. This wine represents an important step in Alvio Pestarino's journey, which began with the 2018 harvest and was strengthened by the acquisition of new vineyards in the municipality of Stazzano, in the Terre di Libarna.

The winemaking process is designed to enhance the identity of the grape variety as much as possible: after a soft pressing, the must ferments cold in steel tanks. This is followed by aging on the fine lees for about 10 months, with weekly bâtonnage that gives complexity and depth. The subsequent rest in the bottle completes the wine's profile, enhancing its harmony and expressiveness.

In the glass, it presents a luminous straw yellow with golden reflections. The aroma is fresh and distinctive, with notes of ripe peach intertwined with elegant nuances of hydrocarbon, typical of Timorasso. On the palate, it strikes with its decisive savoriness and marked minerality, supported by a significant structure and a well-integrated alcoholic balance. The persistence is long and satisfying.

Versatile and gastronomic, "Thimos" naturally accompanies cured meats and cheeses, but also finds its ideal expression with fish main courses.
