The Cervaro della Sala 2024 is an oenological excellence produced by the historic estate Castello della Sala, owned by the Antinori family. This wine represents a perfect balance between innovation and tradition, having been one of the first Italian white wines to undergo malolactic fermentation and barrel aging since its debut in 1985.

Origins and Territory

The estate is located in Umbria, about 18 km from Orvieto, and takes its name from the noble Monaldeschi della Cervara family, who owned the castle in the 14th century.

Grape Varieties and Vinification

• Grape Varieties: 85–92% Chardonnay, 8–15% Grechetto

• Vinification: The grapes are hand-picked in the early morning hours to preserve their freshness. The free-run Chardonnay must ferments in French oak barriques, where malolactic fermentation also takes place. The Grechetto ferments separately in stainless steel.

• Aging: 5 months in barrique for Chardonnay, followed by at least 10 months of bottle aging in the castle's historic cellars.

• Color: Bright straw yellow with greenish reflections

• Aroma: Floral notes of acacia blossoms, citrus fruits like bergamot and cedar, yellow-fleshed fruit (peach, apricot), hints of vanilla and flint

• Taste: Elegant and refined, with a vibrant freshness and a layered complexity that faithfully reflects its terroir
