Vinification
Our Crozes-Hermitage is vinified in traditional a with pumping over and pressing in concrete tanks. This wine comes from organic farming. Stopping all chemicals (and in particular herbicides) allows the vineyard, via tillage, to plunge its deepest root system into the very heart of its land. This deep rooting leads to a more regular physiological behavior of the vine and offers much better resistance to "shaking" and climatic whims. In terms of wines, we quickly perceive finer balances, a marked minerality that differentiates this wine from other Crozes-Hermitage wines from this sedimentary terroir. Vinification and aging in a concrete tank highlights these imperceptible balances.
Farm
The seasoning lasts about 12 months. 85% are made in concrete vats in order to preserve the freshness and minerality of the fruit. The remaining 15% is in barrels which give the wine consistency, power to the wine as well as aromatic complexity.
