After a spring that was appropriately rainy and with normal temperatures, the summer of 2018 was very hot and dry and the grapes of early varieties such as PINOT NOIR quickly reached full sugar ripeness, but polyphenolic ripeness in a slightly more irregular manner. The harvests were on average 10-12 days earlier than average.
The grapes were harvested manually, discarding any bunches that showed sunburn or irregular color.
The alcoholic fermentation was carried out at a controlled temperature to preserve the fruity aromas as much as possible, also using a small percentage of non-destemmed bunches.
At the end of fermentation, after an initial racking, the wine was immediately placed in second and third passage barriques for refinement for about a year, after which it was bottled after a couple of months of natural decantation without fining.
The bottles rested in our cellars for almost 3 years before the start of marketing.
The wine shows off a light and delicate ruby colour, with an olfactory range that opens on notes of creme de cassis, red currant, red tarocco orange and vinyl, followed by dried violet, nutmeg, black pepper and toasted coffee, with echoes cabinet-making and empyreumatic conclusions. The palate is striking with an elegant citric freshness and a silky tannin which slowly develops into a balanced hint of softness; all enriched by the return of fruit and more austere spiciness that accompany the sip to an excellently long finish
