Mephisto, a fascinating creation from Domaine de l'Ecu, is a unique red wine made in amphora and without added sulphur. Sourced from old Cabernet Franc vineyards, over 50 years of history are reflected in every sip. With roots in the Loire granite, this wine extends over 0.8 hectares with a Guyot type planting and a density of 6500 vines per hectare.

The winemaking and aging of Mephisto are an ode to tradition and innovation. After destemming, spontaneous fermentation takes place in stainless steel tanks with a 12-day maceration. Subsequently, racking and aging in amphora for 15 months lead to the creation of an authentic and pure wine. The total sulfur content of 15 mg/l and the production limited to 5,000 bottles testify to the commitment of Fred and Claire Niger.

Mephisto is an elegant, juicy and deep red wine, which reveals a complexity of rich and fleshy features alternating with tense and delicate tones. The skilful use of the amphora contributes to a great expression of pure and naked wines, refined in neutral but breathable materials.
