Origins: 65% Cerretta (Serralunga D'Alba); 35% Roncaglie (La Morra)
Type of soil: Lequio Formation, iron-rich limestone sands for the Serralunga soils; Sant'Agata Fossil marl, marly layers with a higher percentage of clay and silt for the vineyards located in La Morra.
Harvest period: Second ten days of October.
Vinification: After summer thinning, the grapes are harvested manually in 20 kg perforated boxes. Each single vineyard is vinified separately in order to optimize extraction and enhance its peculiarities. After a further manual selection on vibrating tables, the grapes are destemmed and conveyed to the winemakers where the alcoholic fermentation will take place. The maceration lasts for 15-20 days in steel tanks at a controlled temperature, making use of automated pumping over and punching down systems.
Aging: After malolactic fermentation, the wine ages in large 15 hl French oak barrels for 30 months. The two fractions are refined separately and are assembled only before bottling. Before marketing, the wine ages in the bottle for at least six months.
Color: Brilliant ruby red with slight garnet shades
Perfume: Intense, rich and complex: small red fruits, cherry, violet and dried rose, sweet spices complete and enrich the bouquet. Taste: Full and consistent taste, with sweet and enveloping tannins, savory. Long and persistent finish.
