Vinification: Grapes from the Ravera single vineyard located in the municipality of Novello, with about 4500 plants per hectare of an average age of 28 years. The oldest part was planted in 1935. Ravera di Novello is a fabulous hill with south-west exposure, with clayey-calcareous soil and an area of ​​approximately 3 hectares. Following the soft pressing, the fermentation lasts about 4/5 weeks in a steel tank in contact with the skins. This time includes pre- and post-fermentation maceration using the ancient submerged cap method. Slow malolactic fermentation in barrels until late spring. The wine therefore remains more than a year on the malolactic lees without racking.

Aging: 32 months in large oak barrels.

Description: Intense garnet red colour. The nose, initially austere, recalls complex floral notes that open in the glass with the passing of the minutes, hints of red fruit, chalk and white pepper stand out. On the palate it is fine with sensations of ripe red fruits. The tight and compact tannin makes the wine very classic. Vibrant and vertical acidity. Extremely elegant and refined.
We recommend decanting it a few hours before serving.
