Chablis AOC "Mise Tardive Bio" 2020 – Domaine Pattes Loup

The result of Thomas Pico's sensitivity and natural vision, the Chablis "Mise Tardive Bio" 2020 comes from vineyards cultivated according to the principles of organic farming, on clay-limestone soils that enhance the purest expression of Chardonnay.

The grapes, harvested at full ripeness, are vinified with spontaneous fermentations and a long aging on fine lees, carried out in concrete, steel, and neutral wood. "Mise tardive" – delayed bottling – allows the wine to acquire further complexity and depth, while maintaining its original freshness.

Visually, it presents a bright straw yellow. On the nose, it releases refined aromas of citrus, white flowers, aromatic herbs, and a pronounced minerality reminiscent of wet stone.

On the palate, it is tense and vibrant, with an enveloping structure and a incisive savoriness, accompanying a long, precise, and energetic finish.
