Champagne Blanc de Blancs “Special Cuvée 555” – Voirin-Jumel
A stylistic and identity exercise, "Special Cuvée 555" is the Champagne with which Patrick Voirin challenged himself, choosing the best of the family heritage to create a Blanc de Blancs Grand Cru with a distinct and unconventional personality. Made with only Chardonnay grapes from six Grand Cru classified municipalities of the Côte des Blancs, it originates from a blend of several vintages, with a contribution of 30-40% of reserve wine.
Vinification takes place exclusively in steel at controlled temperature, with malolactic fermentation completed, to preserve freshness and clarity. Aging on the lees lasts about 36 months, and upon disgorgement, the wine receives no dosage (sugar 0 g/l), falling into the category of pas dosé. The result is a dry, vertical Champagne of crystalline purity.
In an even more limited version, "555" also exists with a special aging: 100% Chardonnay Grand Cru, from four different vintages, with part of the mass aged in about twenty regenerated small Burgundy barrels, and a rest on the lees of over 48 months. The dosage, in this case, remains very low (6 g/l), bordering on Extra Brut.
In the glass, it reveals a fine and persistent perlage, refined aromas of citrus, white flowers, dried fruit, and a hint of toast. On the palate, it is taut, mineral, vibrant, with chiseled freshness and an elegant structure.
