TRENTO DOC BRUT "ALPEREGIS" MILLESIMATO - ROTARI

GRAPE VARIETIES AND VINIFICATION

This vintage Trentodoc is made from a selection of Chardonnay grapes harvested by our winegrowers in the mountain vineyards north of Trento. Soft pressing and low-temperature fermentation with selected yeasts allow the aromas of the grapes to express themselves fully and blend with those produced by the yeasts. In spring, when the base wines have reached the ideal refinement for secondary fermentation, the Alperegis Brut cuvée is created, assembling the base wines that best express the characteristics of mountain Chardonnay. Low-temperature secondary fermentation and aging on the lees for a minimum of 36 months lead Alperegis Brut to the ideal aromatic and taste balance to support disgorgement.

ORGANOLEPTIC CHARACTERISTICS

Colour: straw yellow with golden reflections. Aroma: hints of ripe yellow fruit, with citrus nuances, along with notes of bread crust and sweet almonds. The perlage is creamy and persistent. Taste: The dosage of the house liqueur, specially developed for this product, enhances minerality and aromatic fragrance, integrating elegantly and making it very gentle on the palate.

A superior class aperitif, it also has the ideal structure to accompany elaborate first courses and fish main courses throughout the meal.
