The average age of the vineyards reaches 60 years, contributing to an average production of 45 hl per hectare. The winemaking takes place through soft pressing, spontaneous fermentation and a 5-month refinement on the fine lees in 50/60 hl cement vats, giving the wine an extraordinary complexity.
