Pinot Chevauchet – Blanc de Noirs Vieilles Vignes Extra Brut

Depth and character: the Meunier from the old vines of the Vallée de la Marne

This "Vieilles Vignes" Blanc de Noirs represents one of the most distinctive expressions of the Pinot Chevauchet family estate, located in Mardeuil, in the heart of the Vallée de la Marne. A cuvée of strong personality, obtained from historic vines over 50 years old (up to 70), capable of imparting depth, concentration, and surprising finesse.

Produced exclusively from Pinot Meunier, this Champagne originates from selected parcels (Pierrotte, Marie Mulotte, and Neuville) on clay-limestone soils with the presence of sand and silt. Vinification in Burgundy oak barrels and aging on the lees for about 3 years contribute to building a complex and layered profile, without losing precision.

In the glass, it presents a brilliant golden yellow with fine and persistent perlage. The nose is intense and deep, with notes of ripe pear, quince, and yellow fruit, enriched by toasted hazelnut, sweet spices, and bread crust. With evolution, elegant hints of acacia honey, candied citrus, and wet stone emerge.

On the palate, it is enveloping yet taut, with creamy bubbles that amplify the sensation of structure. The attack is generous and fruity, followed by a savory and mineral progression that leads to a long, dry, and vibrant finish, with hints of almond and bitter citrus.

A Champagne that combines strength and finesse, a perfect expression of Meunier when it comes from old vines and is interpreted with sensitivity.

Ideal with flavorful and structured dishes, seafood pasta dishes (e.g., pasta with calamari and bottarga), crustaceans and elaborate fish, and important white meats.
