This cuvée is characterized by richness (mature Pinot Noir, aging on lees with bâtonnage, presence of reserve wines). Moderate yields, controlled organic matter input to the soil, and waiting for perfect ripeness give the Pinot Noir and Meunier grapes a higher-than-normal concentration of anthocyanins (coloring molecules present on the grape skins).
Rémi Leroy does not seek to standardize the wine across vintages, despite the presence of some reserve wines. Instead, he indicates on the back label the base vintage of the grapes that predominantly constitute it.
Organoleptic characteristics:
- Appearance: straw yellow color. Fine and persistent perlage.
- Nose: spicy notes and white fruit on the nose, as well as
brioche and pepper. - Taste: round, full, and structured. The finish is persistent.
