Casot is the deepest and most authentic expression of Freisa, crafted with an agricultural and artisanal vision. It originates from a single vineyard, that of Casot, surrounded by woods and characterized by diverse soils, wild herbs, and the skilled hands of farmers who preserve its identity.

The vines, approximately 25 years old, are cultivated with natural grassing, manual mowing, and alternating sowing of legumes, enriched with mature manure to ensure balance and organic matter in the soil. An agricultural approach that enhances biodiversity and soil vitality.

In the cellar, the philosophy is essential and respectful: destemming, fermentation with indigenous yeasts, no fining or filtration. Aging lasts 20 months, with 30% in wood and 70% in concrete, followed by an additional 6 months in bottle.

In the glass, it presents with an intense and deep red color. The bouquet expresses the typical characteristics of Freisa: ripe red fruits, spicy notes, herbaceous hints, and undergrowth. On the palate, it is structured, vibrant, and vertical, with firm yet elegant tannins, supported by freshness and a long persistence.
