Quality Classic Method Sparkling Wine N.V.

"Il Mattaglio" is a Quality Classic Method Brut Sparkling Wine obtained from an elegant blend of Chardonnay and Pinot Noir vinified in white, cultivated in the hillside vineyard of Riccò di Serramazzoni, at an altitude of 650 meters on the Modena side of the Tuscan-Emilian Apennines. A wine awarded the Double Gold Medal at the Sakura Japan Women’s Wine Awards 2015, confirming its quality and finesse.

The grapes, harvested exclusively by hand in the last week of August, are gently pressed and only the free-run must is sent for fermentation in steel at a controlled temperature. Secondary fermentation takes place in the bottle according to the classic method, followed by an aging on the lees for over 24 months, which gives it complexity and balance.

In the glass, it presents a straw yellow color with golden reflections. The aromatic profile is rich and inviting, with citrus notes of lemon and lime zest, floral hints of jasmine, followed by yellow fruit (peach, mango) and delicate references to cotton candy. On the palate, it is fresh, taut, and complex, with a harmonious balance between fruit sweetness and elegant minerality. The finish is clean, savory, and persistent.

A refined mountain sparkling wine, capable of combining freshness, structure, and aromatic precision.

Food Pairings
Ideal as a quality aperitif, it pairs perfectly with fish appetizers, crudités, crustaceans, sushi, delicate first courses, risottos, white meats, and fresh or soft-ripened cheeses. Also excellent throughout the meal.
