Soffio is an interpretation of the region's leading white grape, Arneis: essential, luminous, vibrant.

After fermentation in steel, it rests for about a year in amphora and refines in the bottle before reaching your glass. On the nose, it offers floral and delicately fruity notes, while on the palate, a mineral texture emerges, evolving into a vibrant, crisp, and savory drink. The kind that never tires… in fact, it immediately invites another sip.

To try with:
asparagus and egg, dandelion salad, cereal soups, pea or fava bean purees, nettle risotto. Also perfect with grilled fish, seafood pasta dishes, and fresh cheeses like robiola.

And then… it surprises with great Arneis classics: rabbit, chicken, guinea fowl, shrimp, and calamari.
