SPINOSO

Spinoso is born from careful and conscious agriculture: since 2017 we have followed organic methods (certified since 2023) alongside biodynamic practices, with a meticulous selection of grapes from chosen vineyards.

The harvest is parcelled and calibrated to preserve the perfect balance between acidity and maturity. The grapes, cooled to 0°C before vinification, allow for a fine and precise aromatic extraction.

Vinification involves separating the masses: one part refines in steel, expressing tension and verticality; another in barrique, contributing complexity and evolution. To these is added a perpetual cuvée started in 2016 with the solera method, which enriches the wine with depth and memory.

Second fermentation takes place in the bottle, followed by a long aging on the lees of at least 48 months. After disgorgement, without dosage, the wine rests further in the bottle to best express its identity.

Spinoso is an essential and rigorous sparkling wine, combining energy, complexity, and depth, without compromise, interpreting the balance between freshness and evolution.
