Casina di Burchio

Lavernae 2020 is the most intense expression of the Casina di Burchio project, a small winery in Casentino, Bibbiena (Arezzo). A single vineyard of just 1.5 hectares, with a north-south exposure on clay soil rich in skeleton, yields a limited production of about 3000 bottles per year.

The project, led by Francesca and Filippo, originated from Franco's vision, who planted Syrah and Viognier in 1992, inspired by the great wines of the Rhône Valley. A choice that found surprising expressive coherence in the cool climate and the clay matrix of the territory.

The Syrah undergoes spontaneous fermentation with 15–18 days of maceration in steel tanks. The aging process is long and calibrated: one year in barriques and tonneaux, followed by one year in concrete tanks and a further 6 months in steel before bottling. A necessary journey to tame the power of the terroir and transform it into balance.

In the glass, it presents a vivid ruby color with intense purple reflections. The bouquet is deep and layered: dark spices, citrus, ripe but still crisp fruit, with a slight balsamic hint. On the palate, it is muscular yet sharp, with an almost dense structure supported by energetic and vibrant tannins that extend the sip. The slightly bitter finish and a discreet note of wood accompany a long and harmonious conclusion.

A Syrah of great personality, which has now reached its full expressive maturity, ready to be appreciated for its complexity and depth.

Food Pairings

Perfect with grilled red meats, game, braised dishes, rich stews, and aged cheeses. Also excellent with spicy dishes and structured cuisine.
