TRENTO DOC BRUT "ALPEREGIS" VINTAGE - ROTARI

VARIETY AND VINIFICATION

This vintage Trentodoc is obtained from a selection of Chardonnay grapes harvested by our winemakers in the mountain vineyards north of Trento. The soft pressing and low-temperature fermentation with selected yeasts allow the aromas of the grapes to express themselves at their best and blend with those produced by the yeasts. In spring, when the base wines have reached the ideal refinement for the second fermentation, the Alperegis Brut cuvée is elaborated, assembling the base wines that best express the characteristics of the mountain Chardonnay. The low temperature second fermentation and the aging on the lees for a minimum of 36 months lead Alperegis Brut to the ideal aromatic and gustatory balance to support the disgorgement.

ORGANOLEPTIC CHARACTERISTICS

Colour: straw yellow with golden reflections. Bouquet: hints of ripe yellow fruit, with citrus nuances, together with notes of bread crust and sweet almonds. The perlage is creamy and persistent. Flavour: The dosage of the house liqueur, specially elaborated for this product, allows to enhance minerality and aromatic fragrance, integrating elegantly and making it very gentle on the palate.

PAIRINGS

A superior class aperitif, it also has the ideal structure to accompany the whole meal with elaborate first courses and fish second courses.
