"Codèr" Colfondo Agricolo – Colli Trevigiani IGT

“Codèr” Colfondo Agricolo is a sparkling wine rooted in the most authentic tradition of the Colli Trevigiani. Made from pure Glera grapes, it represents a project dedicated to enhancing the natural evolution of wine in the bottle, through spontaneous refermentation on its lees.

The presence of the characteristic sediment, from which the term “Colfondo” derives, is not just a distinguishing mark but an integral part of the tasting experience: each bottle tells a different vintage, with unique and constantly evolving nuances.

In the glass, if served after a gentle agitation, it appears veiled, expressing its complexity best. On the nose, it offers an intense and authentic profile, with notes of yeast and bread crust intertwining with hints of ripe fruit, destined to evolve over time. On the palate, it is very dry, direct, and savory, balanced by a softness derived from long contact with the lees, with a decisive and persistent finish.

The production follows an artisanal approach: prolonged aging on fine lees in steel with bâtonnage, bottling in spring, and spontaneous refermentation in the bottle, without disgorgement, to preserve its integrity and authenticity.

Versatile at the table, it pairs perfectly with mountain cheeses and structured cured meats like salami and Trevisan soppressa. In its more evolved versions, it also harmoniously accompanies substantial first courses and grilled white meats.

Serving suggestions: serve at 7–8 °C in a large glass. To enhance its complexity and aromaticity, gently shake the bottle to resuspend the lees.
