Valdobbiadene Prosecco Superiore DOCG 2024 “Còl Miliane” Rive di Premaor Extra Brut – Le Volpere

From the selection of a single vineyard in Miliane, in the heart of the Premaor hills, a Valdobbiadene Prosecco Superiore DOCG of great precision and expressiveness is born. "Còl Miliane" represents an authentic cru, capable of elegantly expressing the unique character of a dedicated terroir, characterized by calcareous marl soils and a fresh microclimate that gives the wine a marked verticality and vibrant freshness.

Made from 100% Glera grapes harvested by hand, this Extra Brut stands out for its careful and meticulous processing: from soft pressing to temperature-controlled fermentation, up to aging on the lees and slow secondary fermentation using the Martinotti lungo method. The double maturation of a portion of the grapes contributes to expanding the aromatic complexity, while the almost non-existent residual sugar enhances the purity and definition of the sip.

In the glass, it presents a luminous straw yellow with slightly golden reflections, traversed by a fine, creamy, and persistent perlage. The bouquet is ample and layered: it opens with notes of yeast and fresh fruit, evolving towards hints of aromatic herbs, mint, and light spicy nuances.

On the palate, it strikes with incisive and dynamic acidity, perfectly balanced by a savory, enveloping, and persistent finish. A Prosecco of great balance and depth, capable of surprising even over time thanks to its interesting evolutionary capacity in the bottle.

Versatile in pairings, it elegantly accompanies risottos, white meats, and seafood crudi, particularly enhancing the delicacy of crustaceans and the softness of vegetable flans.
