Giovanni Montisci was a mechanic. Then, an inheritance changed his life. It wasn't a large sum of money, but a small vineyard of Cannonau. Giovanni discovered a love for the land and a passion for viticulture, and began to learn the trade under the expert guidance of some old winemakers. Over the years, the hobby turned into a job: from bulk wine, he moved to bottled wine, entering the market in the mid-2000s. Today, Montisci cultivates just 2 hectares of vineyards (mostly old, 50 to 80 years old!), on the granitic terroir of Mamoiada, in Barbagia di Ollolai. A respectful viticulture, with organic and biodynamic certification underway. In the oldest vineyard, oxen are still used for weeding.

In the cellar, the work is the logical continuation of this natural choice. No selected yeasts, no filtration, no fining, and a very careful and limited use of sulfites. The grapes are destemmed, then ferment spontaneously and macerate for over three weeks, with daily manual punching down.
