The wines created by Domenico Clerico fully reflect his personality: a winemaker who seems to come from a bygone era, inextricably linked to the land of Barolo. Affable, generous and with an unceasing desire to progress and improve, in 1978 he assumed control of the family business that originally supplied grapes to the Cantina Sociale Terre del Barolo. From that moment he began to make wine himself, becoming a producer. Over the years, he has expanded the geographical boundaries of the company more and more, acquiring new vineyards from which some of the most splendid interpretations of Barolo have been born within the Italian wine scene. Recently, he has crowned this vitality by opening his new cellar, a dream come true, characterized by an extraordinary beauty and a futuristic imprint.
Barolo Pajana 2009 represents a cru from a vineyard located in the "Ginestra" area in the Monforte area, an area particularly suitable for the production of Barolo. This vineyard was acquired by Domenico Clerico in 1990. The nose opens with hints of roasting, spices and cocoa, which then fade to make room for small underwater berries and withered flowers. On the palate, its powerful tannins emerge strongly, anticipating an extraordinarily long finish. The wine spent more than two years in barriques, most of which were new.
It goes perfectly with a braised meat cooked in Barolo, but it can also be combined with grilled lamb chops.
