The first Japanese gin produced in Kyoto is KI NO BI, whose name means "The beauty of the seasons". This gin is inspired by tradition and is entirely produced, blended and bottled in Kyoto. It has a characteristic dry style, but with a distinctive Japanese touch.

KI NO BI Kyoto Dry Gin was created using botanicals from Japan, such as yellow yuzu from northern Kyoto Prefecture, hinoki wood chips (a type of Japanese cypress tree), bamboo, gyokuro tea from the Uji region, and berries of green sanshō (a type of Japanese pepper). With an alcohol content of 45.7% ABV, KI NO BI uses a rice spirit and pure Fushimi water as a base, which is the same water used to produce the renowned sake.

The production of KI NO BI requires not only skills in the science of distillation, as others have done in the past, but also the application of the ancient art of blending. Botanicals are separated into six distinct categories: Base, Citrus, Tea, Herbal, Spice and Floral, and are distilled individually. Subsequently, they are skillfully blended to create a perfect balance, resulting in the distinctive flavor of KI NO BI.

KI NO BI is a gin that brings with it the characteristics of the place where it was born. It is crystal clear like the air in the sacred mountains of Kyoto and offers a fresh aroma of yuzu, with a subtle touch of sansho that lingers like a morning mist in a bamboo forest. Juniper completes the experience, highlighting Japanese botanicals. Finally, the ginger root gives it a slightly warm and spicy finish.
