AGRONOMIC OPERATIONS Guyot dry pruning is performed starting from the end of November, maintaining a number of 7-8 buds per vine. From May, the superfluous shoots are eliminated and the main ones are tied up with the scacchiatura and desollonatura; these are basic operations to maintain a good vegetative and productive balance of the plant, especially in the case of young vineyards. At the beginning and end of August, after veraison, two thinning of the grapes are carried out to better distribute the production of the vine on the shoots closest to the vine and to avoid bunching of bunches (main cause of the attack of gray mold in wet years); the thinning of the bunches, which favors a better ripening of the grapes, allows for a greater concentration of sugary and phenolic substances and a better health of the product. For over 20 years we have been practicing the grassing of the vineyards to create a more balanced crown-root relationship of the vine and to safeguard the insects useful to the vineyard; for the same reason, low environmental impact pesticides are used and the use of chemical herbicides is avoided. The grape harvest is manual, in 18 kg crates.

ENOLOGICAL OPERATIONS The vinification begins with de-stemming, to pass, after a period of cold pre-maceration, to alcoholic fermentation. After about 8 days, during the racking, the free-run wine is extracted and left to refine in French wooden barriques (1/3 new, 1/3 of 2nd passage, 1/3 of 3rd passage) for a period of 30 -36 months. Before being bottled a light filtration will be done.

Color: ruby ​​red with garnet reflections. Bouquet: full and intense. It passes from the primary and secondary hints (with a clear fruity sensation of currant and undergrowth) to get to perceive a pleasant concentration of spice and soft tannins, an indication of aging in barriques.
