Location of vineyards: Vezza d'Alba - Piedmont - Italy. Valmaggiore sub-area famous for the quality of its Nebbioli. Cristina di Francia and Filippo d'Agliè have been making extensive use of Nebbiolo from Valmaggiore since 1640. Facing South-West, the average age is 25 years. Soil: loose, tending to sandy. Winemaking: the goal is to arrive at the harvest with the highest possible quality of the grapes. To achieve this, we perform two thinning (early and late August), eliminating part of the apexes and the wings of the bunches, guaranteeing an average production of 1.80 / 2.00 kg per vine. Given the exceptional exposure, the clusters must be kept shaded by the leaves, otherwise on the hottest days the sun would initially cause burns and subsequently the drying of the grapes. For the harvest, which in this vineyard is carried out in two steps spaced one week apart, we use perforated crates of about 18 - 20 kg to protect the integrity of the grapes in the best possible way until pressing. Maceration takes place in steel fermenters, in which the fermentation temperature can be adjusted, and lasts about a week. Subsequently the wine rests in carats (partly new and partly already used), in which the malolactic fermentation takes place, for 16 months, before being assembled again in steel tanks. It is bottled in August and put on the market, after a year in the bottle, three years after the harvest.

Sensory profile: rich and immediate scent with hints of violet, raspberry and blackberry, enriched with elegant spicy touches. The mouth, rich and structured, offers a crescendo of sensations of violet and cocoa up to the powerful and austere meeting of tannins that prolongs the whole of the sensations in a persistent finish. Excellent with game roasts, braised meats and stews, it goes well with cheeses. Tasting temperature: 18 ° C.
